Iced Strawberry Matcha Latte with Lemon Thyme Syrup

Let me tell you, I LOVE this Iced Strawberry Matcha with Lemon Thyme Simple Syrup. The lemon thyme simple syrup is amazing in this drink. Lately, I've been obsessed with making simple syrups and experimenting with different flavours that are not the standard usual.

A friend of mine went on a trip and would send me photos of coffee shop menus she visited and I was inspired by one of the drinks on the menu. How to make Lemon Thyme Simple Syrup

I love making simple syrups! They require minimal ingredients, are easy to make, and are free from preservatives. This Lemon Thyme Simple Syrup is made from the lemon thyme that grows in my garden.

What you'll need:

  • Lemon Thyme (see Substitution)
  • Granulated Sugar
  • Filtered Water

Combine water and sugar in a small saucepan over medium heat. Whisk until all the sugar has dissolved. Add lemon thyme and allow to simmer for 10 minutes, whisking frequently. Remove from heat and allow the mixture to cool slightly before straining syrup into a small jar with a lid.

Substitution: Lemon Thyme is a difficult herb to get your hands on unless you're growing it in your garden. Substitute the Lemon Thyme with regular Thyme and add the zest of ½ a lemon.

Storage: Keep stored in the fridge for about 2-3 weeks. It can keep for longer, usually keeps for 4 weeks for me. I like to use these bottles for syrup storage, I find they work the best for half-batch syrups like we are making here.

Making the Strawberry Compote

The strawberry compote is the next item that is needed to complete our beautiful Strawberry Matcha.

What you'll need:

  • Fresh or Frozen Strawberries
  • Brown or Coconut Sugar

In a small saucepan add strawberries and sugar and cook over medium heat, stirring occasionally. Once strawberries have softened use a masher to break them down. Remove from the heat once it begins to thicken and allow it to fully cool.

Strawberry Compote vs. Strawberry Syrup: Why did I choose to make a compote for this recipe instead of a syrup? Well, for texture! I love the added texture of strawberry chucks in this matcha, it gives me that bubble tea feel. Make sure you mash the strawberries small enough to get through your straws.

Let's talk about making Matcha

Recently I've been playing around with my matcha ratios. These days I've been using 1 teaspoon of matcha to 30ml of warm water for my iced matcha lattes.

Ingredients
  

Lemon Thyme Syrup

  • ½ cup Filtered Water
  • ½ cup Granulated Sugar
  • 5-6 sprigs Lemon Thyme

Strawberry Compote

  • 2 tablespoon Brown Sugar or Coconut Sugar
  • 1 cup Fresh Strawberries Chopped

Iced Strawberry Matcha Latte with Thyme Syrup

  • 1 tablespoon Strawberry Compote
  • 2 teaspoon Lemon Thyme Syrup
  • 1 teaspoon Matcha Powder
  • 30 ml Hot Water
  • ½ cup Cold Milk

Instructions
 

Lemon Thyme Syrup

  • Combine water and sugar in a small saucepan over medium heat. Whisk until all the sugar has dissolved.
  • Add lemon thyme and allow to simmer for 10 minutes, whisking frequently.
  • Remove from heat and allow the mixture to cool slightly before straining syrup into a small jar with a lid.
  • Keep stored in the fridge for about 1-2 weeks.

Strawberry Compote

  • In a small saucepan add strawberries and sugar and cook over medium heat, stirring occasionally.
  • Once strawberries have softened use a masher to break them down. Remove from the heat once it begins to thicken and allow it to cool fully.

Iced Strawberry Matcha With Lemon Thyme Syrup 

  • Whisk together matcha, water, and syrup.
  • Add strawberry compote to the bottom and brush on the sides in a glass.
  • Fill the glass with ice, and milk and pour in the matcha. Stir and enjoy.
