Peachy Spring Mocktail with Thyme and Honey

Spring has entered the chat! The best way to celebrate is with this Peachy Spring Mocktail I've named, Spring Equinox! With hints of Meyer lemon, thyme, and honey.

I used to make this very Living Vinegar from Acid League, but unfortunately, they no longer make this product. Luckily, using the juice of a Meyer Lemon with a splash of apple cider vinegar does the trick!

This is the perfect drink to welcome the spring season! The combination of peach, Meyer lemon, thyme and honey is equivalent to a glass of sunshine! Using Meyer Lemon gives a nice sweetness to the mocktail, while the thyme garnish adds an essence of earthiness.

Spring Equinox Peach Mocktail

Ingredients
  

  • 100 ml Peach Juice
  • 1 teaspoon Meyer Lemon Juice Fresh
  • ½ teaspoon Apple Cider Vinegar
  • 1 teaspoon Honey
  • 3-4 Ice cubes
  • Tonic Water
  • Thyme and Dried Lemon Slice to garnish

Instructions
 

  • To an 8oz glass add peach juice, lemon juice, vinegar, and honey. Mix well.
  • Add ice and top the rest of the glass with tonic water.
  • Garnish with fresh thyme and a dried lemon slice.
