Peach Mocktail with Thyme and Spicy Ginger Beer

Peach season is arguably the best season! This is the perfect time of the year to make my peach and thyme mocktail with spicy ginger beer. I love a good peach mocktail, and this one is amazing. The sweetness of the peaches, the earthiness of the thyme, and the spiciness of the ginger beer are an incredible combination.

This is one of my favorite summertime mocktails especially since I live in an area where we get amazing fresh peaches. The best part is once you make the peach syrup you can make this mocktail whenever your heart desires it.

Peach and Thyme with Honey Syrup

First, we need to make the peach and thyme syrup with honey. I love the simple syrup, it’s so easy to make and tastes incredible, I’m obsessed.

You’ll need just a few ingredients:

  • Peaches
  • Fresh Thyme
  • Honey
  • Water

You can also use this syrup to make other summer mocktails or even try it in an iced matcha.

Let’s Assemble our Peach Mocktail

Once you have the syrup made and cooled you can assemble your drinks! Depending on your spice level choose the Ginger Beer that will be right for you. If you are a no-go on spice, opt for a Light Spice Ginger Beer or a Ginger Ale. Fevertree has some great options for ginger beers.

To assemble add ice, and peach syrup, pour in ginger beer, and top the rest with tonic water. Stir and garnish with fresh thyme and peach slices.

Peach Mocktail with Thyme and Spicy Ginger Beer

Ingredients

Peach & Thyme Syrup (Makes Extra)

  • 4 cups Ripe Peaches; about 6 chopped
  • 8-10 Fresh Springs of Thyme
  • 1 cup Water
  • cup Honey

Assembling the Drink

  • oz Peach Thyme Syrup
  • ¼ cup Light "spice" Ginger Beer use less or more depending on spice level
  • Ice
  • Topped with Tonic water

Instructions

Peach and Thyme Syrup

  • In a saucepan add peaches, thyme, honey, and water
  • Bring the mixture to a boil, then reduce to simmer uncovered for 20 minutes, stirring occasionally
  • When the peaches have softened, use a masher to further breakdown the peaches
  • Pour the mixture over a fine mesh sieve over a bowl. Using the back of a spoon, press down on the mixture to squeeze out as much liquid as possible.
  • Allow the syrup to cool completely before use.

Assembling the Drink

  • In a 12oz glass add ice, peach syrup, and ginger beer, and top with tonic water
  • Garnish with fresh thyme and fresh peach slices

Notes

Store leftover peach syrup in an air-tight container in the fridge. Keeps for a week.
