Peach with Thyme and Ginger Beer Tonic

Ingredients
Peach & Thyme Syrup (Makes Extra)

Ripe Peaches; about 6

Fresh Springs of Thyme

Water

Honey
Assembling the Drink
1½

Peach Thyme Syrup
¼
cup
Light "spice" Ginger Beer
use less or more depending on spice level
Ice
Indian Tonic Water
Instructions
Peach and Thyme Syrup
In a saucepan add peaches, thyme, honey and water
Bring the mixture to a boil, then reduce to simmer uncovered for 20 minutes, stirring occasionally
When the peaches have softened, use a masher to further breakdown the peaches
Pour the mixture over a fine mesh sieve over a bowl. Using the back of a spoon, press down on the mixture to squeeze out as much liquid as possible.
Allow the syrup to cool completely before use.
Assembling the Drink
In a 12oz glass add ice, peach syrup, and ginger beer and top with tonic water
Garnish with fresh thyme and fresh peach slices
Notes
Store leftover peach syrup in an air-tight container in the fridge. Keeps for a week.
