I love having strawberry compote on hand! It makes for an easy topping for yogurt bowls, pancakes and even in iced matcha latte!

Ingredients

  • 2 cups Fresh Strawberries destemmed, halved
  • 2-3 tablespoon Brown sugar or Coconut sugar
  • 1 teaspoon Freshly squeezed Lemon Juice

Instructions

  • Add all the ingredients to a small saucepan over medium heat, stirring frequently for about 5 minutes.
  • Once the strawberries begin to soften, use a masher to mash the strawberries into smaller pieces.
  • When the liquid has thickened, remove it from the stovetop. Place the compote into an air-tight glass container. Allow to cool before covering, store in the refrigerator for about 1 week.
