Honey Thyme Simple Syrup

Sweet, herbal, and beautifully balanced, this homemade honey thyme simple syrup is perfect for coffee, matcha, tea, sparkling water, and lemonades. Made with real honey and fresh thyme, it's an easy way to bring café-quality flavour to drinks at home.

Ingredients

  • 1 cup water
  • ½ cup honey
  • ½ cup granulated sugar
  • 6-8 fresh thyme sprigs
  • Pinch of sea salt

Instructions

  • Add the water, honey, sugar, thyme sprigs, and sea salt to a small saucepan.
  • Bring the mixture to a gentle simmer over medium heat, stirring until the sugar has dissolved completely.
  • Continue simmering for 10 minutes.
  • Remove from the heat and allow the thyme to steep for 20–30 minutes.
  • Strain out the thyme sprigs and transfer the syrup to a clean glass bottle or jar.
  • Allow the syrup to cool completely before using or refrigerating.

Notes

Don't worry if the syrup seems thin after simmering. It will thicken slightly as it cools and reaches its final consistency once refrigerated.
For a stronger thyme flavour, allow the syrup to steep for the full 30 minutes.
Fresh thyme provides the best flavour.
Store the syrup in an airtight bottle or jar in the refrigerator for up to 3 weeks.
